Spelt & Oat Anzac Cookies

I know many of you own a Thermomix, for some of you it's on the wish list, and for the rest of you... well you just love keeping things traditional. So I've given you two ways to create these delicious wheat-free Anzacs. Whichever way you choose, you're gonna love em!

1. The Traditional Way

 

Ingredients

120g butter (half a block)

½ cup honey

2 tbsp water

1 tsp bicarb soda

1 ½ cups gluten free rolled oats

1 cup spelt flour

1 cup desiccated coconut

Here's what you do...

1. Preheat oven to 160 degrees celcius.

2. Add butter and honey to a small saucepan and stir over a medium heat until melted.

3. Stir in the bicarbonate of soda.

4. Pour mixture into a bowl, add the remaining dry ingredients and stir until combined.

5. Scoop spoonfuls of mixture onto a lined baking tray. Bake for 12 minutes or until golden.

 

2. The Thermomix Way

 

Ingredients

120g butter

180g honey

2 tbsp water

1 tsp bicarb soda

150g rolled oats

150g spelt flour

90g desiccated coconut

Here's what you do...

1. Preheat oven to 160 degrees celcius.

2. Melt butter and honey with water 4 min/90 degrees/speed 1.

3. Add bicarb soda and stir 5 secs/speed 3. Scrape down sides of bowl.

4. Add remaining dry ingredients and stir 5 secs/reverse/speed 3. Scrape down sides of bowl and repeat if necessary.

5. Scoop spoonfuls of mixture onto a lined baking tray. Bake for 12 minutes or until golden.
