1 tbsp ghee or olive oil
1 garlic clove, crushed
500g uncooked, peeled prawns
30g baby spinach
1/2 - 1 fresh red chilli, diced
Juice of half a lemon
Grated rind of half a lemon
1 tbsp fresh parsley, chopped
1/4 tsp Himalayan salt
175g cooked gluten-free spaghetti
Here's what you do...
1. Heat ghee or oil and garlic in a fry pan
2. Add prawns and cook until they've just changed colour
3. Add all other ingredients except spaghetti and toss together until the spinach has wilted
4. Serve on top of cooked spaghetti and top with grated parmesan if you wish.
