This mousse gives me my chocolate fix but without the sugar high, using only a banana for sweetness. All of the creaminess and richness of a mousse but no dairy. Seriously!
If like me, you have SIBO (Small Intestinal Bacterial Overgrowth), be sure to divide this into 4 portions right away so you're not tempted to overindulge ;)
1 ripe banana, peeled
Flesh of 1 ripe avocado
120ml thick coconut cream
3 tbsp cacao powder
1 tsp vanilla powder/extract/paste
A pinch of fine Himalayan salt
Here's what you do...
1. Blend all the ingredients together until smooth.
2. Serve right away or store in the fridge to thicken.
3. This can also be enjoyed like sorbet, just store in the freezer and allow to defrost a little before eating.
