½ cup cashews
½ cup macadamias
½ cup desiccated coconut
6 pitted medjool dates
2 heaped tbsp cacao powder
½ tsp vanilla powder
5 drops peppermint essential oil
Pinch fine Himalayan salt
Here's what you do...
1. Blend all ingredients until combined.
2. Form into balls and roll in desiccated coconut if you wish.
3. Store in the fridge or freezer.
I occasionally choose to use essential oils in my food. I recommend using a quality brand, that has been tested for safety, and deemed appropriate to use in food. Please do not buy cheap oils as they often have fillers in them, even when they say they're 100% pure or all natural. If you prefer not to use essential oils or don't have any, then just leave them out.
